My first almond cheese! Sorry for the crappy picture. It doesn’t look like much right now (because it’s still draining and I haven’t put it in the fridge yet), but it tastes AWESOME so far. The recipe was really simple, too!
1 cup raw almonds; soaked over night, drained and peeled
3/4 cup of water
2 tablespoons olive oil
3 tablespoons lemon juice
1 clove of garlic
a pinch of salt
Put all ingredients in a blender or food processor and blend until smooth. Scoop out almond mixture and put it in a nut-milk bag or colander lined with cheesecloth. Give it a light squeeze and let it sit in the fridge overnight.
I have some more almonds soaking in the kitchen for almond milk later!

Massive Star Makes Waves
The giant star Zeta Ophiuchi is having a “shocking” effect on the surrounding dust clouds in this infrared image from NASA’s Spitzer Space Telescope. Stellar winds flowing out from this fast-moving star are making ripples in the dust as it approaches, creating a bow shock seen as glowing gossamer threads, which, for this star, are only seen in infrared light.
